Asafoetida (Ferula assa-foetida), also known as stinking asafoetida (Indian: hing) or devil's dung, is a perennial, herbaceous plant from the Apiaceae family, growing up to 4 meters tall. When the exposed root, which is about 15 cm thick, is cut, it yields a gum resin with a strong garlic flavor. It is used as a spice in Afghanistan, Iran, and India, primarily in Indian cuisine.
